After living in the Southern States for four years the mission was to bring real American barbecue to the streets of London. Whilst barbecue in the UK usually means burnt chicken drumsticks in the back garden, our American friends have grown up with a different kind of barbecue- they have studied it, they have perfected it, and not only this, they've been keeping pretty quiet about it. Of all the global cuisines to have taken up residence on London's streets, authentic wood smoke barbecue is still hard to come by.
So armed with smokers and wood chips imported from the States we created a menu of classic barbecue dishes that include slow-cooked Boston Butt (pork butt), slow-smoked brisket and beef shin, wood smoke bbq chicken breasts, smoked pork belly, bbq baby back ribs and slow-cooked bbq pork cheeks. Accompaniments include our ridiculously creamy mac'n cheese, red cabbage slaw, baked jalapeño grits, homemade courgette pickles and our three signature sauces. Cooking for everyday's lunch service starts the day before with each pork butt enduring an epic 15 hour slow-cook over a blend of cherry, pecan and beech smoke, before landing in the lunch boxes of our waiting customers. The result is the tastiest, juiciest barbecue pulled pork you will find this side of the pond!
