Positioned in the heart of the city centre, Fusion is no ordinary experience, instead it's where stylish, contemporary cuisine meets a comfortable, ambient environment. Our seasonal menus reflect the very best produce on offer locally, in an innovative and sumptuous way.

And it doesn’t stop there, as our bar boasts a truly unique array of spirits, wines + beers. If it's something a little more signature you’re after, our expert team know how to make an array of extraordinary cocktails.

Our recently revamped interior is as stylish and comforting as our food, with an open plan bar and bistro dining downstairs, as well as, an intimate dining space in The Gallery upstairs. For the most spectacular occasions, our Chef's Table is a truly memorable backdrop.

We've worked for the last nine years to ensure that everything we produce is well and truly a signature Fusion item, just to provide every person that comes through our doors with that truly unique Fusion Bar + Bistro experience!
