Have you ever been to a restaurant, had a transcendent meal and been scared to return, just in case the second time isn't as great as the first? The feeling of a place losing its lustre mouthful by mouthful is deflating. Perhaps the chef has changed. Perhaps the memory is fuzzy and exaggerated. Either way, the dream is broken.nnThe Black Swan in Devizes is the opposite of a dream-breaker. Every time I have been there, the food has been just as good or even slightly better than last time. Whilst it is objectively 'easy' to run a great restaurant choose your thing, do it consistently not many places actually manage it.nnI've eaten a good range of their small plates and starters. They are all fantastic and hard to separate or rank. For this review I will focus on just one item from the menu; the HSTLR Burger. In the interest of fairness, I will try to be critical where I can. The spelling of what I assume is 'hustler' would annoy my Nan but she is dead now!nnThe burger is absolutely incredible and there are several reasons why. The first is that it fits into your mouth! So many gourmet burgers come to the table an oozing pile of meat, sauce, bread and associated paraphernalia. Whilst this looks great on the internet, short of being able to dislocate your jaw, the practise of eating such a tower is a clumsy, disgraceful act of shoving, slurping and eventually deconstruction either voluntary or forced. This burger fits into your mouth where others of similar price and perceived majesty don't.nnThis burger is great value for money at £20. The price of everything has gone wild and I am certain you couldn't buy the necessary ingredients for this burger for less than it costs to have made for you perfectly in Devizes marketplace. Buying one burger, one bun, making just enough of every additional element to this burger is impossible. The wastage, the time, the skill to be able to match everything just perfectly would be an impossible task. You'd even have to commit to making the heavily reduced, violently flavourful dipping sauce/gravy the burger comes with. This isn't achievable for £20 at home, not even close. Whilst it might sound outlandish to describe this burger as a bargain at £20, it is.nnThe flavour is intense. Because the thing fits into your mouth, you get a bit of everything in every bite. The bun holds its shape, perfectly containing the intense beefyness of not only the patty but also the extra beefyness of the slow cooked beef atop the burger. There is a balance of salt, fat, acid, umami and sweetness which you can further amplify with the dipping sauce. If you're used to a middle of the road burger, this thing will blow your mind!nnI've not even mentioned the fries that come with it yet. This is a long review already. Unsurprisingly, they are fantastic and the perfect companion to the perfect burger. Just go and order one.nnThe most memorable meal of my life was a burger. During lockdown, I flew to Chattanooga, Tennessee, to see a dying penpal for the first and last time. Tears were rolling over cheeks that ached from smiling so much at a time when the whole world was miserable. It stretched my emotional spectrum both ways at the same time and will forever be a vivid memory. This burger tastes better but happily, doesn't come with the 'risk', the sadness or the need for a plane ticket! This burger is 'hiding' in Devizes marketplace, ready to be devoured for just £20!
We stayed for one night to meet family in the area. This place was a real find and we will definitely be back. The rooms are carefully decorated and furnished with thoughtful touches. We loved the little radio on in the room when we arrived. The residents lounge was exceptional and we used that in the evening for drinks. Breakfast was very tasty.nnOnly negative was our room 7 was next to the kitchen extractor fan and we could hear this in the room and if we opened the window we would get food smells. It was off overnight so didn’t disturb our sleep, the four poster bed was beautiful.
As an ex Hotel Director with experience in Michelin star properties, I am so pleased to have such a brilliant dining room on my doorstep - within a short walk!nAnother superb meal last night. The quality of craftsmanship in the kitchen comes through on all the dishes the three of us chose.nHaggis croquettes; haddock arancini; spicy chicken wings, all with great flavour and dips. What a start!nWe followed this with chicken schnitzel on roasted sriracha sprouts, duck fat hash browns, buffalo sauce and buttermilk mayo.nPerfectly cooked pork chop, so tender still with a hint of pink. Silky smooth pommes purée, grilled hispi with fennel , a great combo.nExcellent rib eye with a fab peppercorn sauce. Crisp chips and an amazing salad packed with flavour.nTo finish a slice of delicious treacle tart and of course the indulgent chocolate brownie.nThe expertise from the kitchen shines through.nGreat service as well from the young team.nWe couldn’t fault the whole experiencenCan’t wait to return. Sunday lunch was very good. Very nicely cooked, presented and seasoned food in a beautiful pub. We had starters, beef mains and desert.nThe service was 5*, we had a very sweet, young waiter who was very aware, very attentive, but not at all intrusive.nOnly one star deducted as food got cold quickly as plates were not heated up, and the ladies room could do with heating and a new sink surround. Other than that a lovely experience.
We recently had a wonderful evening at the Black Swan celebrating our mum’s birthday. All the staff were great and helped make our surprise dinner a success. The food was absolutely delicious, the room looked beautiful and we all had a memorable evening - thank you! The pub itself is so warm and inviting, the rooms were also great and the location couldn’t be more central. Finally, a special mention for the amazing breakfast. It was the perfect end to a brilliant stay. Thank you so much!
